Cedric Bouchard's unique approach to Champagne is based around the philosophy of one variety, one parcel, one harvest. The non-dosage Champagnes are fermented entirely in stainless steel or enamel, and there is no chaptalization, fining, filtering, or cold-stabilization.

This Blanc de Noirs is from the lieu-dit "Val Vilaine." The 2007 bottling is a more mineral-driven than past vintages. It is linear, elegant, and crunchy with delicate red-fruit profile.

2002 is a stellar vintage for Champagne - marked by great quality and concentration, balance and harmony and longevity.

Marguet is a small up-and-coming producer who mainly sources fruit from organic grand cru and premier cru sites. Quality grapes and meticulous cellar work, make for great wines.

The 2002 bottling is 70 percent Chouilly Chardonnay and 30 percent Pinot Noir from Bouzy. This wine is available and forthcoming, with bountiful fruit - red, citrus, pit, it seems to have it all. Vinified entirely in enameled tanks, this is pure expression of 2002 fruit - and a total steal. RSG

This tiny, tiny estate is the epitome of handmade. Georges Laval makes a miniscule amount of wines (we are one of the few places in NY offering Laval), which are very much terroir-driven. The estate has been organic since 1971 and is certified with Ecocert - fermentation takes place in barrel with indigenous yeasts, there is no fining, filtration or cold-stabilization and minimal use of sulfur.

This bottling of Brut Nature is predominantly 2005 fruit with 10% 2004 reserves. It is 50% Chardonnay and then split between Pinot Noir and Meunier. Right out of the bottle it's tightly wound, mineral-driven and slightly austere with delicate plummy fruit. With time and air it reveals more texture even as the bubbles wane, and a strong graphite-rock component gives this wine a firm structure to the red fruit, a characteristic of youth which indicates we will watch this wine age gracefully. As of now, it's precise with saline-minerality and spicy, and should accompany savory and rich foods. A very, very good Champagne, and exceptionally small production - worth it to secure a bottle while it's here. RSG

Prévost has 2 hectares of 40+ year old Pinot Meunier vines in a vineyard called Les Beguines located in Gueux, just west of Reims, and produces about 13,000 bottles. This is a superb Champagne of terroir, grapes grown without herbicides or pesticides, fermented with wild yeasts, with no dosage or filtration. This is rich and intense Champagne that can compliment many foods and meats. Prévost, a former employee of Selosse, did not put the vintage date on the bottle, but it is all 2007 fruit.
